Recipe: No-Bake Coconut Truffles
These no-bake chocolate coconut truffles are one of those treats people either love or hate. They’re basically like a Bounty bar in truffle form. We use dark chocolate for the coating, but milk chocolate works too. If you don’t have coconut oil, just leave it out - it’s used to give the truffles a glossy finish. They’re quick to make and taste amazing, so give them a try!
Ingredients - Makes 15 Small Truffles
100g Desiccated Coconut
70ml Coconut Cream
2 Tbsp Maple Syrup
Pinch of Salt
150g 70% Dark Chocolate
1.5 Tbsp Coconut Oil
Method
1. Mix the desiccated coconut, coconut cream, salt, and maple syrup in a bowl.
2. Roll the mixture into truffle-sized balls with your hands.
3. Place them on a baking sheet and refrigerate for 30 minutes to firm up.
4. Melt the chocolate and coconut oil together over a pan of simmering water.
5. Using two spoons, dip each chilled truffle into the melted chocolate to coat.
6. Set the coated truffles on baking paper to harden.
7. For decoration, drizzle leftover chocolate over some truffles and sprinkle a few with extra desiccated coconut.
