Banana bread often gets a lot of hype and this version really does live up to it. It’s light, perfectly moist, and with a spoonful of coffee cream on the side, it turns into something special. The method couldn’t be easier - just bring the wet and dry ingredients together and let it bake for an hour. The secret is in the bananas: they need to be so ripe they’re almost collapsing, because that’s where the flavour comes alive. We’ve added chocolate chips for an extra layer of sweetness, though they’re optional. The coffee cream, however, is non-negotiable. Banana, chocolate, brown butter, and coffee, it’s a combination that feels indulgent yet effortless. Honestly, this might be the only banana bread recipe you’ll ever need!

Ingredients - Serves 8

For The Banana Bread:

  • 110g Unsalted Butter

  • 150g Light Brown Sugar

  • 50g Granulated Sugar

  • 350g Ripe Bananas

  • 130g Greek Yoghurt

  • 180g Plain Flour

  • 1Tsp Bicarbonate Soda

  • 1/2 Tsp Salt

  • 100g Dark Chocolate Chips

For The Banana Cream:

  • 250ml Double Cream

  • 1 Tsp Instant Coffee

  • 40g Icing Sugar

1. Preheat the oven to 160°C.

2. Start by melting the butter over medium heat until it begins to boil. It will bubble and crack as the moisture evaporates. Stir until the butter turns golden. As foam forms, stir constantly until you see brown specks at the bottom of the pan. Be careful, as it can burn quickly, so don’t walk away! Once you see the brown specks, remove the butter from the heat. It should smell amazing. Pour it into a bowl and let it cool for 5 minutes.

3. Mash the bananas. They don’t need to be perfectly smooth, leave a few small chunks to add texture.

4. Once the butter has cooled slightly, add the sugars and beat together until light and creamy. If mixing by hand, this can take around 5 minutes.

5. Lightly whisk the eggs, then add them to the butter mixture. Once combined, mix in the mashed bananas and Greek yogurt.

6. Gently fold in the flour, bicarbonate of soda, ¾ of the chocolate chips, and the salt until just combined.

7. Pour the batter into a lined loaf tin, sprinkle the remaining chocolate chips on top, and bake for 1 hour. To check if it’s ready, insert a knife into the centre - it should come out clean.

8. Once your loaf is cooled make the cream. In a mixing bowl add the cream, coffee and icing sugar and whisk until thick.

9. Slice the loaf and serve each piece with a generous spoonful of coffee cream.
