Recipe: 10 Minute Prawn Linguine
There’s nothing better than a quick and easy midweek dinner, and this prawn linguine is just the thing. It’s full of flavour, super satisfying, and comes together in no time. We always go for fresh pasta, it cooks in minutes and makes this dish even faster to throw together. When time’s short but you still want something delicious, this recipe is a weeknight winner!
Ingredients - Serves 2
1 Pack Raw Prawns
140g Fresh Linguine
1/2 Pack Cherry Vine Tomatoes
3 Garlic Cloves
1/2 Red Chilli
2 Tbsp Butter
40g Parmesan + Extra To Serve
10 Basil Leaves + Extra To Serve
Zest 1 Lemon
Method
1. Prep your ingredients: half the cherry tomatoes, finely dice the chilli and basil, crush the garlic, zest the lemon, and grate the parmesan.
2. Bring a pan of salted water to a boil and cook the pasta for 4 minutes.
3. While the pasta cooks, heat butter with a splash of oil in a pan over medium heat. Once melted, add the tomatoes and prawns. Cook for 5 minutes, then add the garlic, chilli, and lemon zest. Season with salt and pepper and cook for 1 more minute. You’ll know the prawns are cooked when they turn pink.
4. Drain the pasta, reserving some of the cooking water.
5. Add the pasta to the pan along with a couple of tablespoons of the reserved water to loosen and create a sauce.
6. Stir in the parmesan and basil. Cook for 1 more minute.
7. Serve topped with extra parmesan, basil and cracked black pepper. Enjoy!
